French Fry Dangers
I love to eat French fries as do many other people, but are French fries a healthy choice? Research suggests that they are one of the most unhealthy food choices available. This is the first of several blog posts concerning the many unhealthy aspects of French fries. The aspect of French fries to be mentioned in this post is the fact that potatoes from which French fries are made from are a starchy vegetable and may even be considered a starch. New potatoes have a starch that is closer to amylose in structure than more mature potatoes, and they are somewhat less glycemic. Foods with a low glycemic index typically break down slowly and don't cause drastic fluctuations in blood sugar. Foods with a high glycemic index typically cause drastic fluctuations. On a low carb diet, the main goal is to avoid raising blood glucose too much. This is why we avoid foods which are high in sugars and starches. But it turns out that not all starches are created equal. According to an article by Gloria McVeigh, the nutrition editor of Prevention magazine, the negative effects of the starch from potatoes, are evident. This article can be found at http://www.prevention.com/article/0,5778,s1-3-61-114-6979-1,00.html Women who ate French fries just once a week were 21% more likely to get diabetes than those who didn't eat French fries, according to a 20-year Harvard School of Public Health study of 84,500 women. Eating five servings per week of any white potatoes increased the risk by 14% over those who ate less than half a serving a week. Blame it on the high glycemic index of potatoes. They break down quickly in your stomach, and creating a fast and steep blood sugar rise. Over time, blood sugar spikes damage your insulin-regulating system, leading to carbohydrate addiction or even worse to diabetes. |
